Ingredients
  

Filling
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 20 oz fresh spinach, roughly chopped or thawed and well-drained frozen spinach
  • 8 oz feta cheese, crumbled
  • 1/4 cup fresh dill, chopped
  • 2 green onions, thinly sliced
  • 2 large eggs, beaten
  • Salt and black pepper, to taste
  • pinch nutmeg optional
Assembly
  • 1 16 oz package phyllo dough, thawed
  • 1/2 cup butter or olive oil, melted for brushing
  • Lemon wedges, for serving

Method
 

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 4-5 minutes until softened. Add the garlic and cook for 1 minute more.
  3. Add the spinach in batches, cooking and stirring until wilted, about 4-5 minutes. Transfer to a colander and press out any excess liquid, then let cool slightly.
  4. In a large bowl, combine the cooked spinach mixture with the feta, dill, green onions, and beaten eggs. Season with salt, pepper, and nutmeg if using.
  5. Lay one sheet of phyllo on a clean work surface and brush lightly with melted butter. Top with a second sheet and brush again. Cut the stacked sheets lengthwise into 3-4 inch wide strips.
  6. Place a spoonful of filling at the base of a strip. Fold the corner over to form a triangle, then continue folding flag-style all the way up the strip. Repeat with the remaining phyllo and filling.
  7. Arrange the triangles seam-side down on the prepared baking sheet and brush the tops with more melted butter.
  8. Bake for 25-30 minutes, until golden brown and crisp. Let cool slightly before serving with lemon wedges.
