Classic Vegetable Chili

A hearty, warming chili loaded with kidney and black beans, mushrooms, walnuts for meaty texture, and sweet corn in a rich tomato base. Topped with cheddar, sour cream, and green onions for the ultimate comfort food bowl.

Ingredients
  

Chili
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 bell peppers, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 8 oz cremini mushrooms, chopped
  • 1 cup walnuts, finely chopped
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 28 oz can crushed tomatoes
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 2 cups vegetable broth
  • Salt and black pepper, to taste
For Serving
  • Shredded cheddar cheese
  • Sour cream
  • Sliced green onions
  • Cornbread, for serving optional

Method
 

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, bell peppers, and carrots, and cook for 6-8 minutes until softened.
  2. Stir in the garlic and cook for 1 minute until fragrant.
  3. Add the mushrooms and walnuts and cook for 5-6 minutes, stirring occasionally, until the mushrooms release their liquid and start to brown.
  4. Stir in the chili powder, cumin, and smoked paprika, and cook for 1 minute to toast the spices.
  5. Add the crushed tomatoes, kidney beans, black beans, corn, and vegetable broth. Stir well and bring to a simmer.
  6. Reduce the heat to low and simmer uncovered for 25-30 minutes, stirring occasionally, until thickened. Season with salt and pepper to taste.
  7. Ladle into bowls and top with shredded cheddar, a dollop of sour cream, and sliced green onions. Serve with cornbread on the side.
