Walnut Oat Patties with Onion Gravy
Oatmeal patties are one of the thriftiest dishes in the vegetarian potluck tradition: oats, eggs, onion and a handful of nuts, seasoned with sage and browned in a skillet. Simmered in gravy, they turn tender and savory and soak up flavor the way a good dumpling does.
This version uses walnuts for richness and a simple golden onion gravy made in the same pan. Spoon the patties and gravy over mashed potatoes or rice, with Green Bean Casserole from Scratch or Balsamic-Maple Roasted Brussels Sprouts on the side.

Walnut Oat Patties with Onion Gravy

Method
- In a large bowl, beat the eggs with the milk and 1 tablespoon of soy sauce. Stir in the oats, walnuts, diced onion, garlic, sage, thyme, salt and pepper. Let the mixture stand for 10 minutes so the oats absorb the liquid. It should hold together when pressed.
- Heat 1 tablespoon of the oil in a large, deep skillet over medium heat. Scoop the mixture into the pan by 1/3 cupfuls and flatten each into a patty about 1/2 inch thick. Cook 4 at a time for 3 to 4 minutes per side, until well browned. Move them to a plate and repeat with the rest of the oil and mixture. You should have about 8 patties.
- For the gravy, melt the butter in the same skillet over medium heat. Add the sliced onion and a pinch of salt and cook for 8 to 10 minutes, stirring often, until soft and golden.
- Sprinkle the flour over the onions and stir for 1 minute. Slowly whisk in the broth, then add the remaining tablespoon of soy sauce, the thyme and the pepper. Simmer for 3 to 4 minutes, until lightly thickened.
- Nestle the patties into the gravy and spoon some over the tops. Cover, turn the heat to low and simmer for 10 minutes, until the patties are heated through and have soaked up some of the gravy.
- Sprinkle with parsley and serve hot, with extra gravy spooned over.
