Red Lentil Dal

Ingredients
  

  • 1 tablespoon coconut oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1 cup red lentils rinsed
  • 1 14 oz can diced tomatoes
  • 3 cups vegetable broth
  • 1 13.5 oz can coconut milk
  • Salt to taste
  • Fresh cilantro chopped, for garnish
  • Cooked rice for serving

Method
 

  1. Heat the coconut oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Stir in the garlic, ginger, cumin, turmeric, coriander, and cayenne. Cook for 1 minute until fragrant.
  3. Add the red lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally, until the lentils are tender.
  4. Stir in the coconut milk and season with salt to taste. Simmer for 5 more minutes.
  5. Serve hot over rice, garnished with fresh cilantro.
