Old-Fashioned Scalloped Corn
Scalloped corn is one of those humble, old-fashioned side dishes that shows up at every church supper and family holiday, and always goes home with an empty dish. Two kinds of canned corn are stirred into a simple egg-and-milk custard with crushed saltines and a little cheddar, topped with buttery cracker crumbs and baked until it’s soft in the middle and golden on top.
It takes 10 minutes to mix up, mostly from pantry staples, and it doubles easily for a crowd. It belongs right next to our Creamy Chik’n and Noodles, and it’s a great addition to a vegetarian Thanksgiving spread.
