How to Stock a Vegetarian Pantry (and Plan a Week of Meatless Dinners)
A well-stocked pantry is what makes a meatless dinner a ten-minute decision instead of a trip to the store. Here’s a simple checklist to start with, plus an easy way to turn it into a week of meals.
The pantry basics
- Beans and lentils – canned or dried chickpeas, black beans, and red or brown lentils.
- Grains – rice, quinoa, pasta, oats, and a loaf of good bread or tortillas.
- Canned goods – diced or crushed tomatoes, coconut milk, and vegetable broth.
- Flavor builders – garlic, onions, olive oil, soy sauce, vinegar, and a small collection of spices such as cumin, paprika and turmeric.
- Extras – nut butters, nuts and seeds, and frozen vegetables for the nights when the fresh ones ran out.
A simple framework for the week
Instead of planning seven separate recipes, pick a theme for each night and rotate favorites. For example:
