Stuffed Acorn Squash with Quinoa, Apple and Cranberries
Acorn squash comes with its own serving bowl. Roast the halves until tender, fill them with a warm quinoa stuffing, and you have a main dish that looks impressive with very little effort. The filling tastes a lot like holiday stuffing, with onion, celery, sage and thyme, plus diced apple and dried cranberries for sweetness and toasted pecans for crunch.
It is vegan and gluten-free as written, which makes it a handy choice when you are cooking for a mixed crowd. For a holiday dinner, serve it alongside our Lentil Walnut Holiday Loaf with a spoonful of Cranberry-Orange Sauce on the side.

Stuffed Acorn Squash with Quinoa, Apple and Cranberries
Ingredients
Method
- Heat the oven to 400°F and line a rimmed baking sheet with parchment paper. Brush the cut sides of the squash with the tablespoon of olive oil and season with the salt and pepper. Place the halves cut side down on the baking sheet and roast for 30 to 35 minutes, until the flesh is tender when pierced with a knife.
- While the squash roasts, combine the quinoa and broth in a small saucepan. Bring to a boil, cover, lower the heat and simmer for 15 minutes, until the liquid is absorbed. Take the pan off the heat, leave it covered for 5 minutes, then fluff with a fork.
- Toast the pecans in a large dry skillet over medium heat for 3 to 4 minutes, stirring often, until fragrant. Tip them onto a plate.
- In the same skillet, heat the tablespoon of olive oil over medium heat. Add the onion and celery and cook for 5 to 6 minutes, until soft. Add the apple, garlic, sage and thyme and cook for 3 to 4 minutes, until the apple just begins to soften.
- Stir in the cooked quinoa, cranberries, toasted pecans, maple syrup, vinegar and salt. Taste and adjust the seasoning.
- Turn the squash halves cut side up. Spoon in the filling, mounding it generously. Return the squash to the oven for 10 to 12 minutes, until the filling is hot and lightly golden on top.
- Sprinkle with parsley and serve warm.
