Fluffy Banana Oat Pancakes

A warm, naturally sweetened breakfast blending mashed banana and blended oats — no white flour needed.

Ingredients
  

  • 2 ripe bananas mashed
  • 2 large eggs
  • 1 cup rolled oats blended into flour, or 1 cup oat flour
  • 3/4 cup milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • salt pinch
  • 1 tablespoon butter or oil for the pan
  • maple syrup and sliced banana for serving

Method
 

  1. Blend rolled oats into a fine flour.
  2. Whisk mashed banana and eggs until combined.
  3. Whisk in milk and vanilla.
  4. Add oat flour, baking powder, cinnamon and salt; stir just until combined (small lumps are fine).
  5. Heat butter in a nonstick skillet or griddle over medium heat; pour 1/4 cup batter per pancake.
  6. Cook 2-3 minutes until bubbles form, flip, and cook 1-2 minutes more until golden; repeat with remaining batter.
  7. Serve warm with maple syrup and sliced banana.
