Crunchy Broccoli Salad with Cranberries and Sunflower Seeds
Every potluck table has a broccoli salad, and for good reason. Raw broccoli stays crisp for hours, the creamy, sweet-tangy dressing wins over people who say they don’t like broccoli, and it is one of the few salads that actually improves overnight in the refrigerator.
The classic version gets its smoky, salty crunch from bacon. Here that job goes to chopped smoked almonds and roasted sunflower seeds, stirred in at the last minute so they stay crunchy. Serve it next to BBQ Pulled Jackfruit Sandwiches or Vegetarian TVP Sloppy Joes, or carry it to your next potluck.

Crunchy Broccoli Salad with Cranberries and Sunflower Seeds
Ingredients
Method
- In a large bowl, whisk together the mayonnaise, vinegar, sugar, salt and pepper until the sugar dissolves and the dressing is smooth.
- Add the broccoli, red onion, cranberries and cheddar, if using. Toss until everything is evenly coated. It will look lightly dressed at first; the broccoli releases a little moisture as it sits.
- Cover and refrigerate for at least 1 hour, or up to 24 hours, so the broccoli softens slightly and soaks up the dressing.
- Just before serving, stir the salad well, then fold in the sunflower seeds and smoked almonds so they stay crunchy. Taste and add a pinch more salt if needed.
